Frittata is an easy, quick and budget friendly dish that can be created using basic pantry and fridge staples.
Use this base recipe as the foundation to more creative variations depending on your taste, availability of seasonal produce and in the pantry supplies.
½ cup reduced fat milk
4 spring onions, chopped
½ cup reduced fat cheese
¼ cup self-raising flour
Optional: Personalise your frittata by adding:
- lean ham, chicken or turkey
- grated vegetables such as zucchini, carrot and sweet potato
- left over roast vegetables and crumbled reduced fat feta cheese.
Step 1: Preheat oven to 1800C.
Step 2: In a medium bowl lightly whisk the eggs and the milk until combined.
Step 3: Add the spring onions, cheese and flour and mix until all ingredients are well combined.
Step 4: Spray a baking dish with spray oil and evenly pour the mixture into the dish.
Step 5: Bake for 40 minutes.
Step 6: Serve with salad and crusty wholegrain bread.
